J.E.E.P. & Las Flores

First day back at Jaltemba Equine Education Project (J.E.E.P) or as the Mexicans call it La Refugia - the animal refuge.  For those of you unfamiliar with J.E.E.P., it is a cat, dog, donkey and horse refuge that also takes in just about anything else that needs help.  I have volunteered there since we first came here in 2015.  It is run by an old cowboy called George who also owns Los Compadres hotel and restaurant.  He and his wife give endless hours and funding to J.E.E.P.   Cam and I met George in his jeep on our way up to J.E.E.P. as he wasn't feeling well.  It was a happy reunion and he told us Mickey and others were up at the refuge and they were wondering when we would get there.
Many improvements to J.E.E.P. which were in progress last year are now complete.

The vegetable/fruit truck was in the park today so I made some Pineapple Mango Salsa, Jalapeño stuffed mushrooms and peppers and Arrachera for supper.  Arrachera is flank steak marinated in garlic, tequila, lime, and other spices and then chilled in ice.  I buy it already prepared by the butcher in town.  It is very tender.  I am trying some new recipes to use local fruit, vegetables, meat and cheeses.
